chocolate orange cupcakes

1c buter
1c sugar
2c self rising flour
1t baking powder
4 eggs
1t orange extract
1 1/2t orange zest
1/2 c chocolate chips

glaze
1/2 c chocolate chips
1/3c heavy cream
1t orange extract

350 20 min
combine all ing expect chocolate chips beat till smooth 2-3 min stir in choc chips

glaze melt chocolate add cream and orange extract stir until combined

lemon pound cake

5T butter
3/4c and 3T sugar
1c all purpose flour
1/4t salt
1/4t baking soda
3T lemon juice
2 lemons zested
1/4c milk
2 eggs

350 35 min
whisk flour salt and baking soda in a sep bowl combine 1T lemon juice and milk and a third bowl beat butter and 3/4c sugar till pale and fluffy about 2 min mix in eggs and zest alt adding flour w/ milk mix

honey cinnamon frosting

1 1/2c powdered sugar
1/2c butter
1T honey
1/8t cinnamon

red velvet cake

2T cocoa
2 1/2 c cake flour
1t salt
1 1/2 c sugar
1 1/2c canola oil
2 eggs
2T red color
1t vanilla
1c buttermilk
2t white vinegar
1 1/2t baking soda

whisk flour cocoa salt. in sep bowl beat sugar and oil add egg one at a time mix in color and vanilla on low alt in three flour w/ buttermilk mix baking soda and vinegar add to mixture mix 10 sec

caramel cake

3/4c butter
1c milk
2c all purpose flour
2 3/4t baking powder
1/2t salt
4 eggs
2c sugar
1t vanilla

frosting
2 2/3c brown sugar
1/2c butter
7T evap milk
1t vanilla

combine butter and milk in sauce pan over low remove from heat when butter melted. combine flour baking powder and salt in sep bowl beat sugar and eggs 3-5 min until light yellow stir flour into eggs then add cooled milk and vanilla stir well

frosting
in sauce pan combine brown sugar butter milk and vanilla bring to boil adj heat so frosting bubbles genlty cook 7 min then let cool about 5min beat 2-3 min until thick

pineapple cupcakes

20oz crushed pineapple
1/2c veg shortening
1c butter
2c sugar
6 eggs
3c all purpose flour
1t baking powder
1/4c milk
1t vanilla
1/4c butter
1 1/2c powdered sugar


325 30 min
in a small bowl combine 3/4c juice in juice in a separate bowl 1c drained pineapple.
cream shortening butter and sugar add eggs one at a time. in another bowl sift flour and baking powder add to butter mix alt with milk in threes stir in 3/4c pineapple in juice

1/4c butter
1 1/2 c powdered sugar

coconut cupcakes

3/4c butter
1c sugar
2 eggs
3/4t vanilla
1 1/2c cake flour
1/2t baking powder
1/4t salt
1/2c milk

8oz cream cheese
1c powdered sugar
2t coconut extract
2c sweetened flake coconut

beat 1/2c butter and sugar add eggs one at a time add vanilla beat in rest of ingredients

cream filled cupcakes

2c flour
2t baking powder
1/2t baking soda
1/2t salt
2c sugar

1c sour cream

filling
1 1/2c marshmallow fluff
1/2c butter

whisk cocoa flour baking powder soda and salt
beat butter and sugar add eggs one at a time on low add 1/2 of flour the sour cream then rest of flour

for filling cream marshmallow and butter until smooth chill 15 min then pipe into center of cupcakes

jam cupcakes

combine flour baking powder and 3/4t salt in a bowl in another bowl beat sugar and 1/2c butter until light and fluffy beat in eggs one at a time add 1t vanilla alt flour and milk whisk powdered sugar cocoa 1/4t salt in sep bowl beat remaining butter until fluffy gradually add cocoa mix the beat in milk and 1/2t vanilla after cooked cut hole in top of cupcake and fill w/ jam

banana cream

combine butter and sugar until fluffy add eggs one at a time add banana and vanilla. in a separate combine flour baking powder baking soda and salt add to butter alt w/ buttermilk in threes. after cooked poke holes half way through cake. mix pudding and milk whisk till smooth then pour over cake top with whipped topping sprinkle with chocolate

touch of whipped cream

beat butter and sugar until creamy add eggs in one at a time beat in vanilla in a separate bowl combine flour baking powder and salt. add to butter alternating with milk in threes stir in cookies

strawberry glaze

4T strawberry jello                                                      heat till melted
